Glazed Sweet Potatoes

Roasted potatoes tossed with maple syrup and mustard are both sweet and zesty in this simple recipe.

Ingredients

2 poundssweet potatoes (4 to 5 medium)see savings

1/3 cuppure maple syrup or maple-flavor syrupsee savings

3 tablespoonscoarse-grain Dijon-style mustardsee savings

2 tablespoonscooking oilsee savings

1/2 teaspoonsaltsee savings

1/4 to 1/2 teaspoonfreshly ground black peppersee savings

-
1/2 cupfresh or frozen cranberriessee savings

Directions
1.
Preheat oven to 325 degrees F. Peel and cut sweet potatoes into 1- to 1-1/2-inch chunks. In a large bowl, combine maple syrup, Dijon mustard, oil, salt, and pepper. Add sweet potato and cranberries; toss to coat. Transfer mixture to a 13x9x2-inch baking pan, spreading evenly.

Cover and bake for 50 to 60 minutes or until sweet potato is tender. Stir mixture. Bake, uncovered, for 10 to 15 minutes more or until sweet potato is glazed. Stir before serving. Makes 8 servings.
