Glazed Ham with Sweet Potatoes

This skillet dinner is a delicious example of how ham and sweet potatoes are made for each other. Start with fresh sweet potatoes or save time by choosing canned potatoes.

1 18-ouncecan vacuum-pack sweet potatoes, drained, or two medium sweet potatoes, peeled and sliced (12 to 14 ounces total)see savings

12pearl onions, peeled, or 12 frozen small whole onions, or 3 medium onions, cut into wedgessee savings

3/4 cuporange juicesee savings

2 tablespoonshoneysee savings

1 tablespooncold watersee savings

2 teaspoonscornstarchsee savings

1/2 teaspoonfinely shredded orange peelsee savings

-
1/4 teaspoonground allspicesee savings

-
3/4 poundfully cooked ham slice, trimmed of separable fatsee savings

Directions
1.
In a large skillet combine fresh sweet potatoes, if using, onions, and orange juice. Bring to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until vegetables are just tender.
2.
Stir together honey, water, cornstarch, orange peel, and allspice; add to skillet. Cook and stir until thickened and bubbly. Add canned sweet potatoes, if using, to skillet.
3.
Carefully lay ham slice over vegetables in skillet. Cover and simmer for 5 minutes or until ham is heated through. Place ham on platter; spoon vegetables and sauce over ham. Makes 4 servings.
