Glazed Ham with Sweet Potatoes

    can vacuum-pack sweet potatoes, drained, or two medium sweet potatoes, peeled and sliced (12 to 14 ounces total)

    orange juice

    cornstarch

    finely shredded orange peel

    fully cooked ham slice, trimmed of separable fat

Directions
1.
In a large skillet combine fresh sweet potatoes, if using, onions, and orange juice. Bring to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until vegetables are just tender.
2.
Stir together honey, water, cornstarch, orange peel, and allspice; add to skillet. Cook and stir until thickened and bubbly. Add canned sweet potatoes, if using, to skillet.
3.
Carefully lay ham slice over vegetables in skillet. Cover and simmer for 5 minutes or until ham is heated through. Place ham on platter; spoon vegetables and sauce over ham. Makes 4 servings.
