Ginger-Marinated Lamb Chops

Ingredients

8 lamb rib chops, cut 1 inch thick (about 2 pounds total)

1 green onion, chopped

3 tablespoons reduced-sodium soy sauce

2 tablespoons rice vinegar

2 tablespoons cooking oil

2 tablespoons grated fresh ginger

1/4 teaspoon salt

1/8 teaspoon crushed red pepper

1 clove garlic, minced
Directions

Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl combine green onion, soy sauce, rice vinegar, oil, ginger, salt, crushed red pepper, and garlic. Pour over chops. Seal bag; turn to coat chops. Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning bag occasionally.

Drain meat, discarding marinade. Place chops on the rack of an uncovered grill directly over medium coals. Grill until desired doneness, turning once halfway through grilling time. Allow 12 to 14 minutes for medium-rare doneness (145 degrees F) or 15 to 17 minutes for medium doneness (160 degrees F). Makes 4 servings.
