  • 2  tablespoons
    gin

    very finely chopped crystallized ginger

  • 1  quart
    vanilla ice cream, softened

    Slivered crystallized ginger (optional)

Directions
1.
Warm gin in a small saucepan over low heat. Remove from heat and add chopped crystallized ginger. Cover and let stand at room temperature for 1 hour.

Stir gin mixture into softened ice cream. Spoon into an 8x4-inch loaf pan. Cover and freeze for several hours or until firm. Store in freezer up to 48 hours.
3.
Scoop the ice cream into dessert dishes. Garnish with slivered crystallized ginger, if desired. Makes 8 servings.
