  • 1  8-oz.  can crushed pineapple (juice pack)On Sale
  • 5  cups  finely shredded green and/or red cabbageOn Sale

  • 1  11-oz. can  mandarin orange sections (juice pack), drainedOn Sale
  • 3/4  cup  snipped dried apricots (optional)On Sale
  • 1/4  cup  honeyOn Sale
  • 1  tablespoon  lemon juiceOn Sale
  • 1-1/2  teaspoons  grated fresh ginger or 1/4 teaspoon ground gingerOn Sale

Directions
1.
Drain pineapple, reserving 1/4 cup of the juice; set aside.

In a large bowl, combine cabbage, carrots, orange sections, dried apricots (if desired), and pineapple. Cover and chill in the refrigerator for at least 1 hour or up to 8 hours.
3.
For dressing, in a screw-top jar, combine reserved pineapple juice, honey, lemon juice, and ginger. Cover and shake well. Chill in the refrigerator for at least 1 hour or up to 8 hours.
4.
To serve, shake dressing. Pour over cabbage mixture, tossing to coat. Makes 8 to 10 side-dish servings,
