Garlic Shrimp with Green Rice
Adding a container of prepared pesto turns the rice green. It's a speedy way to provide plenty of fresh basil flavor to this 30-minute recipe.

Ingredients

Green Rice:

3-1/3 cups water

1/4 teaspoon salt

1/4 teaspoon black pepper

1-1/2 cups uncooked white rice

1 sweet red pepper, thinly sliced

1 container (7 ounces) prepared pesto (3/4 cup)

Garlic Shrimp:
-
2 tablespoons oil
-
3 cloves garlic, coarsely chopped

1-1/4 pounds small shrimp (1-1/2 pounds with shells)

1/4 teaspoon salt

1/8 teaspoon black pepper
Directions

Rice: In saucepan, bring water, salt and pepper to a boil. Add rice. Reduce heat to low; cover and cook 15 minutes. Sprinkle red pepper over rice. Cover; cook 5 minutes. Reserve 2 tablespoons pesto for shrimp. Stir remainder into rice; keep warm.

Shrimp: Meanwhile, in 12-inch skillet, heat oil over medium heat. Add garlic; cook 3 minutes. In bowl, mix shrimp, salt, pepper, reserved pesto.

Increase heat to medium-high. Add shrimp; saute 4 to 6 minutes.

Transfer rice to platter. Top with Garlic Shrimp and liquid from skillet. Serve immediately.
