Garden Pilaf
Bold seasonings and fresh vegetables turn ordinary rice into a spectacular side dish.

Ingredients

1 cup packed cilantro leaves (1 oz.)

1 1-inch piece fresh ginger, peeled and quartered

3 cloves garlic

1 medium jalapeno pepper, seeded and chopped (optional)

1/3 cup water

1 tablespoon cooking oil

1/2 cup chopped onion

3 cups fresh vegetables, such as green beans, cut into 1-inch strips; carrots, cut into 1-inch strips; cauliflower florets; whole kernel corn; and/or peas

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

1-1/2 cups cooked rice

3 green sweet peppers, halved (optional)

1/2 cup coarsely chopped cashews

1 tablespoon golden raisins

Directions

In a blender container or food processor bowl combine 1 cup cilantro, fresh ginger, garlic, jalapeno pepper, if using, and water. Cover and blend or process until mixture is nearly smooth. Set aside.

In a large saucepan heat oil; cook and stir onion in hot oil over medium heat for 4 to 5 minutes or until onion is tender. Add vegetables, salt, cinnamon, and cilantro mixture. Bring to boiling. Reduce heat. Simmer, covered, for 10 to 12 minutes or until vegetables are crisp-tender. Stir in cooked rice; heat through. Transfer to a serving dish or spoon into halved green sweet peppers, if desired. Sprinkle with cashews and golden raisins; garnish with cilantro sprigs. Makes 6 side-dish servings.
