  • 3 1/2   pounds
    peeled carrots, cut into 2-inch cubes

    baking powder

    vanilla extract

  • 1/2  teaspoon
    ground nutmeg

  • 1/4  teaspoon
    ground ginger

  • 1/4   teaspoon
    salt

  • 1/4   cup
    all-purpose flour

  • 6  large
    eggs, lightly beaten

  • 2  sticks
    unsalted butter, softened

Directions
1.
Preheat oven to 350 degrees. Lightly grease a 13-x-9-x-2-inch pan.

In a large saucepan, boil or steam carrots until extra soft; drain well.

While carrots are still warm, add sugar, baking powder, vanilla, nutmeg, ginger, and salt. Using a hand mixer, beat until smooth. Add flour and beat until well combined. Add eggs and beat well. Add softened butter, beating until mixture is combined. Pour mixture into prepared baking dish, smoothing top with a spoon or spatula.

Bake until top is golden brown, approximately 1 hour. Serve hot.
