Fire House Salsa Bars

These chewy oatmeal bars have an added kick of flavor with Pace® Salsa and apricot preserves.

Ingredients

1/2large ripe banana, cut upsee savings

-
1 cupPace® Chunky Salsasee savings

-
1 tsp.cornstarchsee savings

-
1/2 cupapricot preservessee savings

-
1 cupbutter, softened (2 sticks)see savings

-
1/2 tsp.ground allspicesee savings

-
1 cuppacked brown sugarsee savings

-
1 1/2 tsp.vanilla extractsee savings

-
2 cupsself-rising all-purpose floursee savings

-
1 cupcoarsely crumbled gingersnap cookie (about 14 cookies)see savings

1 cupquick-cooking oatssee savings

Directions
1.
Place the banana, salsa, cornstarch and preserves into a food processor. Cover and process for 30 seconds or until the mixture is smooth.
2.
Beat the butter, allspice, sugar and vanilla extract in a medium bowl with an electric mixer on medium speed until the mixture is fluffy. Reduce the speed to low. Stir in the flour, cookie crumbs and oats and mix until crumbs form.
3.
Press all but 1/3 cup crumb mixture into a 3-quart shallow baking pan. Top with the salsa mixture. Sprinkle with the remaining crumb mixture.
4.
Bake at 350 degrees F. for 40 minutes or until the topping is browned. Cool in the pan on a wire rack. Cut into 48 bars.
