Fire and Spice Beef Burgers

Directions

Preheat broiler. In a large bowl, combine egg and bread crumbs. Stir in onion, the 2 tablespoons yogurt, salt, cinnamon, coriander and cayenne pepper. Add ground meat; mix well. Shape mixture into 4 oval patties, each about 5 inches long and 1/2 inch thick.

Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 11 to 13 minutes or till done (160 degree F), turning meat after half of the boiling time, then brushing once with 2 tablespoons of the jalapeno jelly. Spoon remaining jelly over patties before serving. Serve burgers in lettuce-lined pita halves with cucumber slices and additional yogurt, if you like. Makes 4 servings.

Test Kitchen Tip
The internal color of a burger is not a reliable doneness indicator. A beef burger cooked to 160 degrees F is safe, regardless of color. To measure the doneness of a burger, insert an instant-read thermometer through the side of the burger to a depth of 2 inches.
