Festive Sesame Vegetables For 6

Accent a frozen vegetable mix with flavorful wedges of fresh fennel and toasted sesame seed.

Ingredients

2small fennel bulbs (about 6 ounces each), cut into thin wedgessee savings

1 16-ounce packageloose-pack frozen mixed broccoli, baby carrots, and water chestnutssee savings

1/2 cupsliced celerysee savings

1 tablespoonsesame seedsee savings

1 tablespoonolive oilsee savings

1 tablespoonlemon juicesee savings

1/4 teaspoonsaltsee savings

1/8 teaspoonpeppersee savings

Directions
1.
In a large saucepan, cook fennel in a small amount of boiling water, covered, for 3 minutes. Add frozen vegetables and celery. Return to boiling; reduce heat. Cover and simmer about 5 minutes or until the vegetables are tender. Drain.

Meanwhile, in a small skillet cook sesame seed in hot olive oil for 1 to 2 minutes or until light brown. Remove from heat. Cool slightly. Carefully add lemon juice, salt, and pepper.
3.
Pour sesame mixture over drained vegetable mixture. Stir gently until coated. Makes 6 side-dish servings.
