Fennel and Wheat Berry Salad

Wheat berries, with their slightly chewy texture, make a simple broccoli and orange salad extraordinary. Wheat berries are whole, unprocessed wheat kernels. You can typically find them in health food stores.

    broccoli slaw mix

    balsamic vinegar or white wine vinegar

    salad oil

Directions
1.
In a 2-quart saucepan combine water, wheat berries, and salt. Bring to boiling; reduce heat. Cover and simmer for 40 minutes. Add rice. Cover; cook for 20 minutes more or until rice is tender. Drain off any excess liquid. Cool mixture.

In a large bowl gently stir together the wheat berry-rice mixture, orange sections, and broccoli mix. Set aside.

For dressing, in screw-top jar combine vinegar, salad oil, sugar, and crushed fennel seed. Pour the dressing over wheat berry mixture; toss gently to mix. Makes 6 servings.
