Ingredients
  • 1  pound
    boneless, skinless chicken breasts

    mixed salad greens

  • tomato (8 ounces), cut into 1/2-inch pieces

  • 1/4  cup
    light red wine vinaigrette

  • slices cooked bacon, crumbled

  • 1/4  cup
    crumbled blue cheese

  • hard-cooked eggs, peeled and chopped

Directions
1.
Heat a large pot of water to simmering. Add chicken, cover, and cook 18 minutes or until cooked through. Cool and cut into 1/2-inch cubes.
2.
To serve, place chicken, greens and tomatoes in a large serving bowl and pour vinaigrette over top; toss to combine. Sprinkle each serving with equal amounts bacon, blue cheese and eggs.
