Ditalini with Chickpeas
Fun shaped pasta joins forces with turkey bacon and chickpeas in a spicy tomato sauce. This dinner recipe takes less than 30 minutes to prepare.

Ingredients

8 ounces ditalini

1 teaspoon canola oil
-
4 slices turkey bacon, cut crosswise into 1/2-inch pieces

1 small onion, chopped

2 cups fire-roasted diced tomatoes

pinch red pepper flakes

1 can (19 ounces) chickpeas, drained and rinsed
Directions

Bring a large pot of salted water to a boil. Cook ditalini according to package directions. Drain, reserving 1/2 cup of pasta water, and return pasta to the pot.

Heat oil in a medium-size saucepan over medium-high heat. Add bacon and onion and cook for 3 minutes. Lower heat to medium and add tomatoes and red pepper flakes to saucepan; cook another 15 minutes. Add chickpeas to pot and cook 1 minute or until warmed through.

Stir sauce into pasta, adding pasta water to the sauce if necessary. Serve immediately.
