Ingredients

6large hard-boiled eggssee savings

4 Teaspoonscapers, finely choppedsee savings

2 Tablespoonsfinely chopped celerysee savings

1green onion, finely choppedsee savings

-
2 Ounce-weightscooked ham, finely choppedsee savings

-
3 Tablespoonsmayonnaisesee savings

-
1 TeaspoonDijon mustardsee savings

Directions
1.
Cut the boiled eggs in half lengthwise; scoop out yolks into a bowl.
2.
Mix celery, green onion, ham, mayonnaise and mustard. Season to taste with salt and pepper.
3.
Divide the yolk mixture evenly among the reserved whites, mounding it slightly. Garnish with paprika and parsley if desired.
4.
Eggs may be stored, covered in plastic in the refrigerator for up to 1 day.
