Dazzling Citrus Chicken
Orange and grapefruit sections add a refreshing burst of flavor to each bite of this saucy chicken. This 20-minute dinner is great for busy families.

Ingredients

1 grapefruit

1 orange

Orange and/or grapefruit juice

4 medium skinless, boneless chicken breast halves (1-1/4 to 1-1/2 pounds total)

Salt and ground black pepper

2 tablespoons cooking oil

2 tablespoons packed brown sugar

4 teaspoons cornstarch
-
2 tablespoons orange liqueur or orange juice

Drained maraschino cherries (optional)

Torn mixed greens
Directions

Peel and section grapefruit and orange, reserving juices. Add enough additional orange and/or grapefruit juice to combined reserved juices to equal 1 cup citrus juice. Set juice and sections aside.

Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in hot oil over medium-high heat about 12 minutes or until tender and no longer pink (170 degrees F), turning once. Transfer to a serving platter; keep warm.

Meanwhile, in a medium saucepan, combine brown sugar and cornstarch. Stir in the reserved citrus juice and the orange liqueur. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Add fruit sections; heat through. If you like, stir in cherries.

Spoon fruit sauce over chicken. Serve with greens. Makes 4 servings.
