In a large bowl, beat cream cheese and honey with an electric mixer on medium to high speed for 15 seconds. Beat in the orange juice and crystallized ginger. Gradually add pudding mixture to cream cheese mixture, beating until combined.
In six 6-to 8-ounce parfait glasses, layer 1 cup of the berries, 1/2 cup orange sections, half of the custard mixture, and half of the granola. Repeat layers. If you like, garnish with a few additional berries. Serve immediately. Makes 6 servings.
