Curried Quinoa Salad with Grilled Shrimp

The shrimp gets a healthy side dish with this recipe. Quinoa, cranberries, scallions, and seasonings make up the nutrient-packed base for this dinner.

Ingredients

3 ouncesfrozen uncooked shrimp, thawed under running water for 5 minutessee savings

1 teaspoonolive oilsee savings

3/4 cupwatersee savings

-
1/2 cupquinoasee savings

-
1/4 teaspooncurry powdersee savings

-
1 tablespoondried cranberriessee savings

-
1 cupchopped cucumberssee savings

-
2scallions, choppedsee savings

Directions
1.
Toss shrimp with oil. Grill for 6 to 8 minutes, flipping once.
2.
Bring water and quinoa to a boil, cover, and simmer for 15 minutes.
3.
Stir in curry, cranberries, cucumbers and scallions. Top with shrimp.
