Curried Crab Salad

In just 20 minutes, serve this crabmeat salad recipe. Combine a mixture of fruits--pineapple, cantaloupe, honeydew melon, and strawberries--with celery and salad greens. Pour over a dressing of yogurt, mayonnaise and curry powder.

Ingredients
  • 2 cups  cut-up fresh fruit (such as pineapple, cantaloupe, honeydew melon, and/or strawberries)On Sale
  • 1 6-ounce  package frozen crabmeat, thawedOn Sale
  • 3/4 cup  sliced celeryOn Sale
  • 1/4 cup  light mayonnaise dressing or salad dressingOn Sale
  • 1/4 cup  plain low-fat yogurtOn Sale
  • 2 tablespoons  fat-free milkOn Sale
  • 1/2 teaspoon  curry powderOn Sale
  • 4 cups  torn mixed salad greensOn Sale
Directions

In a large bowl combine fresh fruit, crabmeat, and celery; set aside.

For dressing, in a small bowl stir together mayonnaise dressing, yogurt, milk, and curry powder.

Divide salad greens among 3 salad plates. Top with crab mixture and drizzle with dressing. Makes 3 servings.
