Directions
1.
Combine ginger and simple syrup in a small saucepan and place over medium heat. Cook and stir until simmering. remove from heat; remove ginger from syrup. Set aside. Cut half of 1 cucumber into thin slices; set aside. Peel the remaining 1 1/2 cucumbers. Roughly chop peeled cucumbers; puree in a blender.

Combine pureed cucumber, ginger-infused simple syrup, sake, and lychee juice in a cocktail shaker. Shake and pour through a strainer over ice into glasses. Garnish with cucumber slices and a couple of lychees.
