  • 2   
    medium cucumbers
  • 1/2  cup 
    flavored cheese spread (such as Boursin)
  •  
    Assorted toppers (such as snipped fresh chives, crumbled crisp-cooked bacon, finely chopped hard-cooked eggs, quartered cherry tomatoes, and/or sliced green onions)
Directions

If desired, using a vegetable peeler or zester, remove a few lengthwise strips of peel from cucumbers. Slice cucumbers 1/2 inch thick. Spread a small amount of the cheese spread onto each cucumber slice; sprinkle with assorted toppers. Makes 20 appetizers.
Make Ahead Tip
  • Prepare as directed. Cover with plastic wrap. Chill for up to 4 hour before serving.
