Ingredients
  • 2   tablespoons 
    unsalted butter
  • 1   
    small onion, finely chopped
  • 1   teaspoon 
    chopped garlic
  • 20   ounces 
    chopped frozen spinach, thawed
  • 43 1/2  ounces 
    chicken broth
  • 2   cups 
    heavy cream
  • 1/2  teaspoon 
    ground nutmeg
Directions
1.
In a large stockpot, melt butter over medium heat. Add onion and saute until softened, about 4 minutes. Add garlic and saute until aroma is released, about 30 seconds. Add spinach and broth and simmer 5 minutes, to allow flavors to blend.
2.
Puree soup in blender in batches and return to pot. Add cream and cook on low until heated through. Finish with nutmeg and season to taste with salt and pepper.
