Creamy Chicken Stir-Fry

    Vegetable cooking spray

    cut-up fresh vegetables (broccoli florets, sliced carrots, green or red pepper strips)

  • skinless, boneless chicken breast halves (about 1 pound), cut into strips

    (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)

    water

    soy sauce

    hot cooked rice

Directions
1.
Spray a 10-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the vegetables and stir-fry until tender-crisp. Remove the vegetables from the skillet. Remove the skillet from the heat.
2.
Spray the skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and stir-fry until well browned.
3.
Stir the soup, water and soy sauce in the skillet and heat to a boil. Reduce the heat to low. Return the vegetables to the skillet. Cook until the mixture is hot and bubbling, stirring occasionally. Serve the chicken mixture over the rice.
4.
Easy Substitution: You can substitute Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free) for the Cream of Chicken Soup.
