Cracked-Pepper Steak with Yogurt-Lime Sauce
For this low-calorie main dish, rub flank steak with salt, pepper, and garlic powder and broil until juicy and tender. A low-fat creamy sauce tops the final dish.

Ingredients

1 pound beef flank steak

2 tablespoons cracked black pepper

2 teaspoons garlic powder

2 teaspoons sea salt or kosher salt

2 teaspoons sugar

Yogurt-Lime Sauce
Directions

Preheat broiler. Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1-inch intervals.

In a small bowl, combine black pepper, garlic powder, sea salt, and sugar. Sprinkle evenly over both sides of steak; rub in as much as you can with your fingers. Let stand, covered, for 10 minutes. Rub in the remaining mixture.

Meanwhile, make Yogurt-Lime Sauce; cover and chill until serving time.

Place steak on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 15 to 18 minutes or until medium doneness (160 degree F.), turning once. Remove from heat; let stand for 10 minutes.

Slice steak thinly across the grain. Serve with Yogurt-Lime Sauce. Makes 4 servings.
Yogurt-Lime Sauce
In a small bowl, combine 1 cup plain low-fat yogurt, 1 tablespoon toasted sesame oil, 2 teaspoons finely chopped crystallized ginger, 1 teaspoon finely shredded lime peel, 1/4 teaspoon ground cinnamon and 1/8 teaspoon salt. Makes about 1 cup sauce.
