Country Peach Tart

This spin on a peach pie recipe is just as delicious. Refrigerated pie crust makes this a simple and easy dessert.

1recipe Pastry for Single-Crust Piesee savings

1/4 cupgranulated sugarsee savings

4 teaspoonsall-purpose floursee savings

1/4 teaspoonground nutmegsee savings

3 cupssliced, peeled peaches or nectarines (about 1 pound)see savings

Directions

Preheat oven to 375 degrees F. Prepare pastry for Single-Crust Pie; set aside. Line a baking sheet with foil; sprinkle lightly with flour. Roll pastry to 13-inch circle on prepared baking sheet.

In a large bowl, stir together granulated sugar, the 4 teaspoons flour, and nutmeg. Add peaches and lemon juice; toss gently until coated. Mound peach mixture in center of pastry, leaving a 2-inch border. Fold border up over peaches. Sprinkle center with sliced almonds. Lightly brush top and sides of the crust with milk.

Bake for 35 to 40 minutes or until crust is golden and filling is bubbly. If necessary, cover edge with foil the last 5 to 10 minutes of baking to prevent overbrowning. Cool 30 minutes on the baking sheet. Dust edges with powdered sugar. If desired, serve with whipped cream.

Country Pear Tart: Prepare 1 recipe Browned Butter Pastry. Prepare filling as above, except substitute 4 cups sliced, peeled pears (1-1/2 pounds) for the peaches and 1 tablespoon finely chopped crystallized ginger or 1/4 teaspoon ground ginger for the nutmeg. Assemble tart as above, except after brushing pastry edges with milk, sprinkle with additional granulated or coarse sugar. Bake as directed. Do not dust with powdered sugar.
