Country-Ham Potato Soup

Ingredients
1/4 cup butter
1 1/2 cups chopped onion
1 tablespoon minced garlic
1 cup chopped country ham
2 tablespoons all-purpose flour
3 cups chicken broth
4 cups unpeeled, chopped new potatoes
1 1/2 cups heavy cream
2 teaspoons fresh chopped thyme
1/2 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
1 cup sharp Cheddar cheese
1/2 cup sour cream
Garnish
additional chopped country ham
Directions
1. In a large stockpot, over medium-high heat, melt butter.
2. Add onion, garlic, and ham; cook for approximately 4 minutes, or until onion is soft and ham begins to brown.
3. Add flour and stir for approximately 1 minute, or until well blended.
4. Add broth and stir; cook until thickened and bubbly.
5. Add potatoes; bring to a simmer. Reduce heat to medium-low, cover, and cook for 15 minutes, or until potatoes are tender.
6. With a potato masher, mash potatoes until only a few chunks remain.
7. Add cream, thyme, red pepper flakes, and black pepper; cook for 2 minutes.
8. Stir in cheese and sour cream until well blended.

I tried it last night and was yummy. Followed recipe except added 2 stalks of celery-diced. A very comforting soup for us who live in the cold weather.Am thinking of maybe adding clams next time for a chowder. I agree with stevey 3276 that my bowl was not big enough!
3/7/2010 10:52:27 AM Report AbuseThere is only one thing wrong with this soup, MY BOWL IS NOT BIG ENOUGH! This soup is amazing. I have started making double the amount. I made the mistake of giving a bowl of it to a friend, now I have a standing order to make him some every time I make a batch.
1/19/2010 06:22:00 PM Report AbuseGreat flavor and richness! Could be spicy, if you over do it on the red pepper flakes. We added more cheese as a garnish. More ham could be added in the beginning. I used some that I defrosted from the freezer from the last time I made a ham. Next time I will put in two cups. We will be adding this to the family dinner rotation! SO GOOD!
