Directions
1.
Remove skin and excess fat from turkey breast. In a small saucepan cook coriander, onion powder, chili powder, and red pepper in margarine for 1 minute. Remove from heat and stir in lemon juice. Spread spice mixture on all sides of turkey.
2.
In a covered grill arrange medium-hot coals around a drip pan. Test for medium heat* above the pan. Insert a meat thermometer into the thickest part of turkey breast, but not touching the bone (if present). Place turkey breast on grill rack over drip pan but not over coals. Lower grill hood. Grill 1-1/4 to 1-3/4 hours or until thermometer registers 170 degrees F. Add more coals as needed. Makes 8 servings.

Note
The heat is medium when you can hold your hand over the heat at food height for 4 seconds before having to pull away.
