Confetti Coleslaw

We perked up bagged coleslaw mix for this side salad by adding fresh-cut orange bell peppers and chopped cilantro.

  • 1/2 cup well-shaken buttermilk
  • 1/4 cup sour cream
  • 1 1/2 tablespoons apple-cider vinegar
  • 1 tablespoon sugar
  • 3/4 teaspoon coarse salt
  • 3/4 teaspoon fresh-ground black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 16 ounce bag shredded coleslaw mix
  • 2 orange bell peppers, stemmed, seeded, and cut into thin 2-inch-long strips
Whisk together buttermilk, sour cream, vinegar, sugar, salt, pepper, and cilantro in a large serving bowl.
Gently stir in coleslaw mix and bell peppers. Keep coleslaw chilled, covered, at least 30 minutes or until ready to serve. Makes 8 servings.
