Coconut Frosting

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/2 teaspoon meringue powder
  • 4 cups confectioners' sugar
  • 1 cup cream of coconut
Directions
1. 
In a large bowl, beat butter at medium speed with an electric mixer until creamy. Add meringue powder, sugar, and cream of coconut. Beat until well blended and spreadable.*
Note:
1. 
*If frosting is too thin, add more confectioners' sugar, 1/4 cup at a time, until desired consistency is reached. If it is too thick, add more cream of coconut, 1 tablespoon at a time.
