Ingredients
  • 1   cooking spray
  • 1/2  cup soy flour
  • 1/3  cup unsweetened shredded coconut
  • 2   ounces or 1/4 cup hazelnuts
  • 2   large egg whites
  • 2   tablespoons seltzer water
  • 1 1/2  teaspoons coconut extract
  • 1/2  teaspoon vanilla extract
  • 1/2  teaspoon salt
  • 8   tablespoons unsalted butter
  • 7   tablespoons granular sugar substitute (sucralose)

Directions
1. 
Preheat oven to 350 degrees F. Toast hazelnuts in an even layer on a cookie sheet 8 minutes. Cool, coarsely chop the hazelnuts and set aside.
2. 
Put oven up to 375 degrees F. Grease baking sheet with cooking spray.
3. 
In large bowl, combine soy flour, coconut, hazelnuts, egg whites, seltzer, coconut and vanilla extracts, salt, butter, and sugar substitute. Mix well.
4. 
Drop by rounded 1 tablespoonful (12 cookies) onto prepared baking sheet. Bake 20 minutes, or until light golden brown. Cool cookies on baking sheet 1 minute before transferring to wire racks to cool completely.
