Citrus Salad

Ingredients

2 grapefruits
-
4 oranges
-
4 kiwis, peeled and sliced

3 cups cubed pineapple, cut into 1 1/2-inch cubes

1/2 cup sugar
-
1 cup toasted coconut
Directions
1.
Over a small bowl, section grapefruits and oranges, reserving juice.

In a small saucepan, combine 1/2 cup juice and sugar. Cook over medium heat for 5 minutes, whisking well, until combined. Let cool.
3.
In a medium bowl, combine grapefruit segments, orange segments, kiwi, and pineapple.
4.
Pour simple syrup over top of fruit, tossing gently to combine. Divide fruit into individual servings. Sprinkle with coconut. Serve immediately.
