Chunky Apple-Sage Appetizer
This quick and easy appetizer is low in calories and fat. You also can serve the apple mixture as a side dish for pork, turkey, or chicken.

Ingredients

1/4 cup finely chopped red onion

1 tablespoon olive oil

3 medium apples (such as Pink Lady) cored and chopped (about 3 cups)

2 tablespoons snipped fresh sage or 2 teaspoons dried sage, crushed or 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed

2 tablespoons dried cranberries

1 tablespoon apple brandy (optional)

12 packaged crisp flatbreads, large whole wheat crackers, or toasted pita wedges

6 tablespoons shredded lowfat sharp white cheddar cheese or Parmesan cheese
Directions

In a medium saucepan cook onion in hot olive oil over medium heat for 2 to 3 minutes or until softened. Stir in apples, sage, and dried cranberries. Cook, covered, over medium heat for 10 to 12 minutes or until apples are softened, stirring occasionally. Remove from heat; stir in apple brandy, if desired. Let cool slightly.* Serve warm over flatbread. Top with shredded cheese.

*Make-Ahead Tip: Cover and refrigerate apple mixture up to 6 hours. Let stand at room temperature 20 minutes before serving.
