Chopped Summer Salad

Ingredients

2 cups lady peas

2 cups cream peas

2 teaspoons salt, divided

2 cups fresh corn kernels (approximately 3 ears)

1 cup diced red bell pepper

1/2 cup chopped green onions
-
2 tablespoons chopped fresh basil
-
3 tablespoons fresh lemon juice

1/2 cup olive oil
-
1/4 teaspoon ground black pepper
Directions
1.
In a large pot of boiling water, combine peas and 1 teaspoon salt and cook for 12 to 15 minutes, or until just tender. Drain and rinse until cooled completely.

In a medium bowl, combine peas, corn, and remaining ingredients, tossing gently to coat.
