Ingredients

  • 3/4 cup soy flour
  • 1 tablespoon cocoa powder
  • 3/4 cup granular sugar substitute (sucralose)
  • 1/4 teaspoon salt
  • 1/3 cup unsweetened peanut butter
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons chocolate extract
Directions
1. 
Heat oven to 375 degrees F. Lightly spray baking sheets with cooking spray.

Whisk soy flour, cocoa powder, sugar substitute, and salt in a bowl. In another bowl mix peanut butter, cream, eggs, vanilla, and chocolate extracts until smooth. Add to dry ingredients; stir until blended.

Drop dough by tablespoonfuls onto greased baking sheets. Smooth dough with fingertips and press cookies to flatten. Bake 8-10 minutes, until browned.
4. 
Cool cookies on baking sheets 1 minute before transferring to wire racks to cool completely.
