Chipotle Pot Roast with Sweet Potatoes

For a different twist on a classic pot roast, try this delicious chipotle-spiced chuck or round roast with sweet potatoes.

Ingredients

3 to 3-1/2 poundschuck or round roastsee savings

1 tablespooncanola oilsee savings

Salt and peppersee savings

-
3sweet potatoes, peeled and cutsee savings

1onion, cut into wedgessee savings

-
1chipotle pepper, mincedsee savings

-
1 teaspoonadobosee savings

-
1 teaspoonground cinnamonsee savings

-
2 tablespoonshoney or maple syrupsee savings

-
3/4 cupbeef brothsee savings

Directions
1.
Heat oven to 325 degrees Fahrenheit. Tie chuck or round roast with kitchen twine if boneless or not compact. Heat canola oil in a Dutch oven and sear beef on all sides until dark brown. Season with salt and pepper.
2.
Add sweet potatoes and onion to pan. Stir together chipotle pepper, adobo from chipotle, 1 teaspoon ground cinnamon, 2 tablespoons honey or maple syrup and 3/4 cup beef broth and pour over meat and vegetables. Cover and roast in oven until beef is fork-tender, 3 to 3 1/2 hours.
