Ingredients

1/2 cupchopped onionsee savings

1clove garlic, mincedsee savings

1 13-ounce cantomatillos, rinsed and drainedsee savings

1/3 cupshelled raw pumpkin seeds (pepitas), toasted*see savings

1 4-ounce candiced green chiles, undrainedsee savings

1/4 cupchicken brothsee savings

3 tablespoonssnipped fresh cilantrosee savings

1/4 teaspoonsaltsee savings

4Tyson® Grilled & Ready® Chicken Breast Filletssee savings

Directions
1.
For mole, in a large skillet cook and stir onion and garlic in hot oil over medium heat 5 minutes or until onion is tender.
2.
In a blender or food processor combine onion mixture, tomatillos, pumpkin seeds, undrained chiles, broth, cilantro, and salt. Cover and blend or process with several on-off turns to a coarse puree. Transfer mole to the skillet and heat through.
3.
Meanwhile, prepare Grilled & Ready® Chicken Breast Fillets according to package directions.
4.
To serve, spoon mole over chicken breasts.
Serving Suggestion:
Sprinkle each serving with additional toasted* pumpkin seeds.
*Note:
Spread seeds in a single layer in a shallow baking pan. Bake in a 350 degrees F oven 5-10 minutes or until seeds are golden brown. Stir once or twice.
