Chicken with Grapes
For an easy and flavorful meal, spoon grapes in apple-flavored sauce over boneless chicken breasts.

Nonstick spray coating
4 small (12 ounces total) boneless skinless chicken breast halves
1/2 cup apple juice or apple cider
1 teaspoon instant chicken bouillon granules
1 teaspoon cornstarch
1/4 teaspoon dried mint, crushed (optional)
1 cup seedless green or red grapes, halves
Meanwhile combine apple juice, bouillon granules, cornstarch, and, if desired, mint. Add to skillet. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Stir in grapes and heat through. Serve over chicken. Makes 4 servings.
