Chicken-Wild Rice Chili

Wild rice adds extra heartiness to this healthy chicken dinner in a bowl.

Ingredients

1 lb.skinless, boneless turkey or chicken breast, cut into 1/2-inch piecessee savings

1 Tbsp.cooking oilsee savings

1/4 cupchopped onionsee savings

1/2 tsp.bottled minced garlicsee savings

3 cupswatersee savings

1 14-oz. canchicken brothsee savings

2/3 cupwild rice, rinsed and drainedsee savings

-
2 4-oz. cansdiced green chile pepperssee savings

-
2 tsp.chili powdersee savings

-
1 tsp.ground cuminsee savings

1 15 1/4-oz. canwhole kernel corn, drainedsee savings

1 15- to 16-oz. canGreat Northern beans, rinsed and drainedsee savings

Bottled hot pepper saucesee savings

-
Shredded Monterey Jack cheese or Monterey Jack cheese with jalapeno peppers, shredded (optional)see savings

Dairy sour cream (optional)see savings

Snipped fresh parsley (optional)see savings

Directions
1.
In a 4- to 5-quart Dutch oven, cook turkey or chicken, half at a time, in hot oil until brown, adding onion and garlic with the last half of the turkey.
2.
Stir in the water, broth, wild rice, undrained chile peppers, chili powder, and cumin. Bring to boiling; reduce heat. Simmer, covered, for 35 to 40 minutes or until wild rice is tender. Stir in corn and beans. Heat through. Season to taste with several dashes of bottled hot pepper sauce.

To serve, ladle into soup bowls. Serve with cheese and sour cream. If desired, garnish with parsley. Makes 6 to 8 servings.
