Chicken Tacos

These low fat, easy-to-make, chicken, chili pepper, and tomato stuffed tacos are great for family dinners.

Ingredients

Nonstick cooking spraysee savings

1/2 cupchopped onion (1 medium)see savings

1 clovegarlic, mincedsee savings

2 cupschopped cooked chickensee savings

1 8-ounce cantomato saucesee savings

1 4-ounce candiced green chile peppers, drainedsee savings

12taco shellssee savings
-
2 cupsshredded lettucesee savings

1 mediumtomato, seeded and choppedsee savings

1/2 cupfinely shredded reduced-fat cheddar cheese and/or Monterey Jack cheese (2 ounces)see savings
Directions
1.
Lightly coat a large nonstick skillet with cooking spray. Heat over medium heat. Add the onion and garlic; cook until onion is tender.
2.
Stir in the chicken, tomato sauce, and chile peppers. Heat through.
3.
Divide chicken mixture among taco shells. Top with lettuce, tomato, and cheese. Makes 6 servings.
