Chicken Salad Sandwiches

Mango chutney adds sweetness to this chicken salad recipe.

  • 1/4 cup mango chutney
  • 2 tablespoons mayonnaise or salad dressing
  • 1 teaspoon curry powder
  • 2 cups cubed, cooked chicken or turkey
  • 1 cup seedless red grapes, halved
  • 1/4 cup sliced or slivered almonds, toasted
  • 4 croissants, split, or 6-inch pita bread rounds, halved crosswise
  • Lettuce leaves
Cut up any large pieces of chutney. Combine chutney, mayonnaise, and curry powder. Stir in chicken, grapes, and almonds.
Line each croissant with lettuce; top with chicken salad mixture. Makes 4 servings.
