Chicken Salad Sandwiches

A plain yogurt and light mayonnaise dressing keep this chicken and apple salad low in fat.

Ingredients

1 cupchopped cooked chicken breastsee savings

-
1/3 cupchopped cored apple, chopped seeded cucumber, or finely chopped celerysee savings

-
1hard-cooked egg, peeled and choppedsee savings

-
2 tablespoonsplain low-fat yogurtsee savings

-
2 tablespoonslight mayonnaise or salad dressingsee savings

-
Salt and black peppersee savings

-
8 sliceswhole wheat breadsee savings

-
4lettuce leavessee savings

Directions
1.
In a medium bowl stir together chicken, apple, and egg. Add yogurt and mayonnaise; stir to combine. Season to taste with salt and pepper. Serve immediately or cover and chill up to 4 hours.
2.
Spread chicken mixture on half of the bread slices. Top with lettuce leaves and remaining bread slices. Cut away crusts if desired. Cut each sandwich into four triangles or squares.
