Chicken-Salad Cups
This easy low-fat chicken salad recipe is served in a tomato, making it a fun snack for kids.

Ingredients

1/4 cup low-fat mayonnaise

1 teaspoon Dijon mustard

1/4 teaspoon sugar

Onion juice (a few drops)*

Pinch of salt and pepper

1 cup cooked diced chicken breast

1/4 cup grated carrots
-
1/4 cup finely chopped celery

4 medium-size ripe tomatoes

Whole-grain crackers (optional)
Directions

In a small bowl, combine mayonnaise, mustard, sugar, onion juice (*use a garlic press to squeeze a piece of onion for juice), salt, and pepper. In a medium bowl, combine chicken, carrots, and celery. Stir in mayonnaise dressing.

Cut the tops off tomatoes and save. Scoop out seeds and pulp. Fill with chicken salad and place tomato tops on a lids. Serve with crackers, if desired.
