Chicken-Fruit Salad
After work, stop at the store for a deli-roasted rotisserie chicken to make this quick main-dish salad.

Ingredients

4 ounces dried rotini or radiatore

1 medium apple, chopped

1-1/2 cups shredded roasted chicken

1 cup seedless red grapes, halved

1 stalk celery, sliced (1/2 cup)

1/4 cup plain fat-free yogurt
-
1/4 cup light mayonnaise dressing or salad dressing

3 tablespoons fat-free milk
-
4 teaspoons Dijon-style mustard

1 tablespoon snipped fresh marjoram or 3/4 teaspoon dried marjoram, crushed
Directions

Cook pasta according to package directions; drain. Rinse with cold water; drain again. Combine pasta, chopped apple, chicken, grapes, and celery in a large mixing bowl.

For dressing, combine yogurt, mayonnaise, milk, mustard, and marjoram in a small bowl. Drizzle dressing over pasta mixture; toss gently to coat. Serve immediately or cover and refrigerate up to 2 hours. Makes 4 servings.
