Chicken Couscous

The combination of cumin, cinnamon, ginger, and cayenne pepper give this 20-minute one-dish meal flavors typical of Middle-Eastern cooking.

1 poundboneless, skinless chicken breasts, cubedsee savings

1/2 teaspoonsaltsee savings

1/4 teaspoonblack peppersee savings

2 cupschicken brothsee savings

3cloves garlic, thinly slicedsee savings

1/2 teaspoonground cuminsee savings

1/2 teaspoonground cinnamonsee savings

1/2 teaspoonground gingersee savings

1/4 teaspooncayennesee savings

8 ouncesshredded carrotsee savings

1/2 cupraisinssee savings

1 cupcouscoussee savings

1/2 cupslivered almonds, toastedsee savings

Directions
1.
Heat oil in a large nonstick skillet over medium-high heat. Add onion and saute 3 minutes. Season chicken with salt and pepper. Add to skillet and saute 3 minutes, stirring. Add broth, garlic, cumin, cinnamon, ginger, cayenne and 1 cup water; bring to a simmer. Add carrot and raisins and simmer another 3 minutes.

Stir in couscous. Cover; remove from heat. Let stand 5 minutes. Serve topped with almonds.
