Ingredients
-
1/2 of a 17-1/2-ounce package (1 sheet) frozen puff pastry
-
2 cups torn mixed greens
-
4 ounces fully cooked ham, chicken, or beef, cut into thin strips
-
1 medium yellow or red sweet pepper, cut into bite-size strips
-
1 cup cherry tomatoes, cut into wedges
-
1/2 cup soft-style cream cheese with chives and onion
-
2 tablespoons milk
-
2 teaspoons coarse-grain brown mustard
-
1 tablespoon milk
-
1-1/2 cups shredded Gruyere cheese (6 ounces)
-
1 or 2 hard-cooked eggs, cut into wedges (optional)
Directions
1.
Thaw pastry according to package directions; cut pastry into 4 squares. Place pastry squares on a large baking sheet. Use a fork to generously prick pastry squares. Bake in a 375 degree F oven for 20 to 25 minutes or until golden brown (pastry will shrink). Cool.
2.
Meanwhile, in a large mixing bowl combine greens; ham, chicken, or beef; sweet pepper strips; and cherry tomato wedges.
3.
For dressing, in a small mixing bowl stir together cream cheese, the 2 tablespoons milk, and mustard. Spoon half of the dressing over the greens mixture, tossing to coat. Stir the 1 tablespoon milk into the remaining dressing; set aside.
4.
Preheat broiler. Sprinkle 1 cup of the Gruyere cheese over the baked pastry squares. Broil 4 inches from heat about 1 minute or until cheese melts. Divide greens mixture evenly among pastry squares. Sprinkle with remaining Gruyere cheese. Broil for 1 to 2 minutes more or until cheese melts. Serve with remaining dressing. If desired, garnish with hard-cooked eggs. Makes 4 servings.
