  • 2 tablespoons
    butter

    olive oil

  • Vidalia onion, minced

  • clove garlic, minced

  • 2 bunches
    spinach, stemmed and chopped

    Salt and freshly ground black pepper to taste

  • 1/4 teaspoon
    freshly ground nutmeg

  • 1/2 cup
    heavy cream

  • 1/4 cup
    Parmesan cheese, grated

  • 1/4 cup
    chive and onion cream cheese

Directions
1.
In a medium saute pan over medium-high heat, melt butter and add the olive oil. Mix in the onions and garlic; cook for 2 minutes until soft. Stir in the cream cheese until melted. Add the chopped spinach and warm through. Add the salt, nutmeg, heavy cream and Parmesan cheese. Cook approximately 5 minutes or until liquid reduces by half. Serve hot.
