Cheese Tortellini with Cannellini Bean Sauce

  • 1  15-ounce  can cannellini beans, rinsed and drainedOn Sale
  • 2/3  cup  milkOn Sale
  • 1/4  cup  grated Parmesan cheeseOn Sale
  • 1/3  cup  thin slivers of red and/or yellow sweet pepperOn Sale
  • 1/3  cup  thin slivers of green sweet pepperOn Sale
  • 1  tablespoon  chopped fresh oregano or 1 teaspoon dried oregano, crushedOn Sale
  • 1/4  teaspoon  saltOn Sale
  • 1/4  teaspoon  ground nutmegOn Sale
  • 1/8  teaspoon  freshly ground pepperOn Sale
  •     Shredded Parmesan cheese (optional)On Sale
  •     Fresh oregano sprigs (optional)On Sale

Directions
1.
Cook tortellini according to package directions. Drain. Meanwhile, place the beans and milk in a food processor bowl or blender container. Cover and process or blend until smooth.

Transfer to a large skillet. Stir in grated Parmesan cheese, red and/or yellow pepper, green pepper, oregano, salt, nutmeg, and pepper. Cook and stir until heated through. Serve sauce over drained tortellini. If desired, sprinkle with shredded Parmesan cheese and garnish with fresh oregano. Makes 4 servings.
