Cheese Tortellini with Cannellini Bean Sauce
You can make this low-fat pasta dish in a snap thanks to canned beans and refrigerated tortellini. Try it for a busy weeknight dinner.

Ingredients

1 9-ounce package refrigerated cheese-stuffed tortellini

1 15-ounce can cannellini beans, rinsed and drained

2/3 cup milk

1/4 cup grated Parmesan cheese

1/3 cup thin slivers of red and/or yellow sweet pepper

1/3 cup thin slivers of green sweet pepper

1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano, crushed

1/4 teaspoon salt

1/4 teaspoon ground nutmeg

1/8 teaspoon freshly ground pepper

Shredded Parmesan cheese (optional)

Fresh oregano sprigs (optional)
Directions

Cook tortellini according to package directions. Drain. Meanwhile, place the beans and milk in a food processor bowl or blender container. Cover and process or blend until smooth.

Transfer to a large skillet. Stir in grated Parmesan cheese, red and/or yellow pepper, green pepper, oregano, salt, nutmeg, and pepper. Cook and stir until heated through. Serve sauce over drained tortellini. If desired, sprinkle with shredded Parmesan cheese and garnish with fresh oregano. Makes 4 servings.
