Cheese and Veggie Sandwiches

This vegetarian sandwich is delicious with a bowl of tomato soup.

Ingredients

1-1/2 cupscottage cheese, drainedsee savings

1/4 cupshredded carrotsee savings

-
1/2 teaspoonfinely snipped chivessee savings

-
1/4 cupchopped green pepper or celerysee savings

-
1/4 cupplain low-fat yogurtsee savings

-
8small slices whole grain breadsee savings

-
2 tablespoonshorseradish mustardsee savings

-
Spinach or lettuce leavessee savings

-
4tomato slicessee savings

Directions
1.
In a medium mixing bowl combine the cottage cheese, carrot, chives, and green pepper or celery. Stir in the yogurt.
2.
Spread the bread slices with horseradish mustard; top with spinach or lettuce leaves. Spoon the cheese mixture onto half of the bread slices. Top with a tomato slice and remaining bread slices. Makes 4 servings.
