Cheese and Ham Sandwiches
A caraway-flavored sour cream and sauerkraut tops this Amish-style ham and cheese sandwich. Serve it for a quick dinner.

Ingredients

1/4 cup mayonnaise or salad dressing

1/4 cup dairy sour cream

1/4 teaspoon caraway seeds, crushed

1/8 teaspoon freshly ground black pepper

1/2 of an 8-ounce can sauerkraut, drained (1/2 cup)

12 1/2-inch-thick slices country-style sourdough, white, whole wheat, and/or rye bread

18 1-ounce slices cheddar, American, Colby and Monterey Jack, Swiss, and/or provolone cheese

6 slices thinly sliced cooked ham (optional)

3 to 4 tablespoons butter, melted

Pickles (optional)
Directions

In a small bowl combine mayonnaise, sour cream, caraway seeds and black pepper. Stir in sauerkraut; set aside.

Place 6 slices of bread on a large foil-lined baking sheet; top with 6 slices of the cheese. Divide sauerkraut mixture evenly atop cheese on bread slices. Top sauerkraut mixture with ham, if you like, and remaining 12 slices of cheese. Using a pastry brush, brush remaining 6 slices of bread with some of the butter. Place bread slices, buttered side up, atop cheese to make 6 sandwiches. Turn sandwiches; brush bread tops with remaining butter.

Bake in a 350 degree F oven about 10 minutes or until cheese is melted and bread is lightly browned, turning once. To serve, cut grilled cheese sandwiches from corner to corner and serve with pickles, if you like. Makes 6 sandwiches.
