Ingredients

2 Tablespoonsextra virgin olive oilsee savings

1-1/2 Poundsmedium celery stalks, in 2-inch piecessee savings

1/4medium onion, finely choppedsee savings

1 TablespoonThick-It-Upsee savings

1 Cupvegetable brothsee savings

2plum tomatoes, seeded and choppedsee savings

6green olives, choppedsee savings

2 Tablespoonschopped fresh parsleysee savings

Directions
1.
Heat oil in a large skillet over medium heat. Add celery and onion; cook 5 minutes, until onion is softened. Sprinkle with thickener, salt and pepper and mix well. Saute 2 minutes. Stir in broth; heat to boiling.

Cover and simmer 10-15 minutes, until celery is tender.Uncover and stir in tomatoes and olives. Simmer 3 minutes, until liquid thickens. Season to taste with salt and pepper. Sprinkle with parsley.
