  • 2 Tablespoons
    extra virgin olive oil

    medium celery stalks, in 2-inch pieces

    medium onion, finely chopped

    vegetable broth

  • plum tomatoes, seeded and chopped

  • green olives, chopped

  • 2 Tablespoons
    chopped fresh parsley

Directions
1.
Heat oil in a large skillet over medium heat. Add celery and onion; cook 5 minutes, until onion is softened. Sprinkle with thickener, salt and pepper and mix well. Saute 2 minutes. Stir in broth; heat to boiling.

Cover and simmer 10-15 minutes, until celery is tender.Uncover and stir in tomatoes and olives. Simmer 3 minutes, until liquid thickens. Season to taste with salt and pepper. Sprinkle with parsley.
